Holiday Eggnog

12 egg yolks
12 egg whites
1-1/2 cups sugar
1/4 teaspoons salt
1 quart heavy cream
1 quart milk
1 quart bourbon whisky (optional)
1 cup rum (optional)

Beat egg yolks with 1 cup of sugar and salt until very light. Beat
whites until stiff and beat in 1/2 cup sugar. Combine and beat
until thoroughly blended. Beat in cream , then milk. Stir in
whisky. if used. Beat well, then add rum if used. Pour into a
gallon jug. Store in a cool place. shake thoroughly before serving.
